M&S Cleaning in an Ambient Environment Insights

Delivering a practical, workshop-led approach, this course equips ambient M&S suppliers with the tools to manage hygiene risks in dry environments and move beyond basic compliance. It focuses on building robust, risk-based cleaning systems that improve standards, strengthen audit performance, and prevent contamination before it occurs.

Description

This workshop-based course focuses on the challenges and best practices of hygiene management in ambient food factories, where dry environments, allergen control, and dust management present unique risks.

Delegates will gain a clear understanding of the purpose of cleaning and how effective hygiene systems prevent contamination, protect product quality, and reduce risks such as pest activity, foreign bodies, and consumer complaints.

A key focus of the course is understanding the reliance on dry cleaning methods and the associated risks, including airborne dust, cross-contamination, and ineffective residue removal.

The training takes a data-driven approach, using audit findings and real-world examples to highlight common failures in hygiene standards and how to address them. Participants will explore how to:

  • Develop risk-based cleaning schedules and define appropriate cleaning frequencies
  • Select and apply the correct cleaning methodologies, including dry cleaning, moisture control, and purge techniques
  • Implement effective “clean as you go” (CAYGO) and daily hygiene standards
  • Determine the appropriate level of equipment breakdown for effective cleaning

The course also places strong emphasis on people, training, and resource management, ensuring that hygiene practices are consistently delivered.

Delivered through a mix of practical sessions, group exercises, and real-life scenarios, the training enables delegates to apply learning directly to their own environments and build realistic, workable solutions.

By the end of the course, participants will be able to:

  • Understand and manage the specific hygiene risks in ambient environments
  • Implement robust, risk-based cleaning and verification systems
  • Improve hygiene standards and audit performance
  • Drive a culture of ownership, accountability, and continuous improvement in cleaning operations

Who Should Attend?

Designed for hygiene, technical, and operations teams, the training provides the knowledge and hands-on tools needed to implement effective cleaning systems, manage allergen and contamination risks, and drive continuous improvement through robust validation and verification processes.
